Chop Onions for Fennel Soup

Hi I'm Stephanie Barnett on behalf of Expert Village. I'm here to show you how to make fennel soup. Now you want to chop your onions. You need a very sharp knife and good size onion. First take the top off, take the bottom off. I find it easy to cut it in half and then you can easily peel the outside of the onion off. Then you are going to take the onion and slice down and you want to think about what you are using the onion for. If I'm making a big stew I want maybe bigger pieces. If I'm making a soup I may be want smaller pieces. You can do a course chop or a fine chop. I have started it off as a course chop that is a course chop. If you wanted finer you just go back in and cut the onion just like this. There you go you just keep chopping until you get the consistency that you like.
