How to Prepare Cheese for Pizza Dough

Hi, I'm Stephanie Barnett on behalf of expertvillage.com. Let's turn this pizza dough into this pizza pie. What is pizza without cheese? You need cheese for your pizza, I know there are people who have pizzas without cheese but for me you have to have cheese on your pizza. So the first cheese that you need to have for your pizza, it's mozzarella; it melts beautifully, it taste wonderful, it's mild, it's a great thing. Now I know that a lot of Cuisinart have the shredder component on it but it doesn't shred the cheese nicely for a pizza. It just doesn't melt great, you really need to use a box grater, now the important thing with this is that I like to put a glass plate down or whatever kind of plate you have at the house. Your box grater, put your hand up here and then push down on the cheese next to the grater. Keep your fingers away from that surface, I can't tell you how many pieces of skin I grated off my fingers, because I wasn't paying attention and put my finger down by the thing. Then you have to find the skin so that is not a good thing. So this is how you grate the cheese and once you get the cheese up you're going to move it over, put the grater down and do more. Also the other cheeses that are nice for the pizza are Provolone, and I like to use a little bit of goat cheese on my pizza. Any other kind of cheeses that you like make a mixture it will add a great flavor to your pizza.
