Hi, I'm Rachel for Expert Village. Now we are going to go through the ingredients of the Zucchini Muffins. For that we are going to need two and half cups of whole wheat flour. You can use it with regular white flour but I prefer to use the whole wheat flour. One teaspoon of baking powder, one and half teaspoon of baking soda, one-half teaspoon of salt. You are going to need two teaspoons of vanilla extract. A little bit of walnuts to decorate later on. A tablespoon of grounded cinnamon, three eggs, three-quarter cup of oil, two, actually one and two-thirds cup of brown sugar and two cups of zucchini but here you can see the difference of the color. I have zucchini; a cup of zucchini and a cup of apple. This can be with either grounded zucchini, grounded apple or grounded carrots. You can decide and mix all three of them. As long as it is two cups, you can mix all three of them together. You can make it only with zucchini or only with apples or only with carrots. I mixed it half half as I said. I have one cup of grounded apples and one cup of grounded zucchini here. We will need two big bowls for the dry ingredients and a smaller bowl for the wet ingredients, a cupcake muffin or cupcake pan. As you can see, this is a smaller size. This has smaller size for muffins here because these are actually good for kids and since kids don't like to have something big in their hands, younger kids. Usually when I make those muffins I make them on a tray this size muffins and cupcake holders as you can see.
