Today, we are going to talk about cutting boards, and why it is important to choose the right cutting board. But, Laura why should we pick a plastic cutting board? Well, this is so interesting, because for many years its been perpetuated in the media that plastic is the way to go but you know what? Science has shown that its really not true. Really wood is the way to go. The reason being there were several studies done, with a plastic cutting board and a wood cutting board, and what these scientists did is they actually inoculated these two cutting boards with salmonella, "really" yes, to compare the bacterial growth and which is the healthier way to go in keeping your kitchen clean and what they found is that the wood cutting board absorbed the bacteria and made it just go away, literally, after two to five minutes the salmonella went away. That's Fantastic!! What do you have here bamboo? Yes, I do I have bamboo and I have several bamboo cutting boards. Why do you use bamboo? Because bamboo is a sustainable product that can regrow in a matter of four years for a full bamboo plant to grow to its peak and it's harvested like lets say you want to turn it into hardwood floors or a product like this versus going out and cutting down old red wood trees to produce a consumer product. So that's much more sustainable! Yes, it's much more sustainable and also bamboo has natural antibacterial properties to it as well so it helps keep your kitchen clean as well, free of bacteria, and you know other germs and things you just don't want lurking in your kitchen. "What do you use to clean this off with, probably your vinegar solution that you showed us how to make?" Yeah, yeah the vinegar is really wonderful, and here's a great another little tip. You can create your own little cleaning system. You can put vinegar in one bottle. You want to put it in a spray bottle, then you want to put hydrogen peroxide in another bottle, separate by itself. You want the bottle to be opaque because hydrogen peroxide degrades really easily when it's exposed to light. What you do is after you are done using your cutting board, say your cutting a piece of meat, or chicken, you just want to spray it down with the hydrogen peroxide and then follow it with the vinegar. It doesn't leave a flavor either. You'll smell a little bit of the vinegar, but it immediately goes away. "I have a question for you, do you use two different boards, one for meat and one for vegetable? Do you use separate boards?" Yes, Yes, I do, I still separate it. Particularly if you know I am cooking, making a salad, I'm making a chicken salad... I will cut the chicken on one cutting board, and then I will cut my vegetables on another cutting board just as an extra precaution. Yes, you don't want to do any cross-contamination.
