Slicing the Orange Peel to Make Cranberry Sauce

Hi, this is David for Expert Village and today we are going to make homemade cranberry sauce. Now we are going to do some zested orange. If you don't have a zestier that is a tool that has a claw on the end of it with a little ridged on the end of it and you just pull the zestier right off here. If you don't have that and a lot of people don't I would use the old potato peeler and instead of doing long strips I would just try to take off just again you just want that little bit of the peeling on the outside. Again you don't want that bitter piff that goes in the inside that helps the orange protects itself. So you just do like that do small little bits of it. You see it does not come off as fine as the grated and this is why you want a little bit bigger pieces of the orange it gives it a terrific flavor that goes with the Port wine, the cranberries and the lemon and you would see some of the other ingredients that we are adding soon.
