Tips for Seasoning Midwest Chili

Hi, I'm Matt Senatore on behalf of Expert Village and today we are going to learn how to make Midwest Chili. Okay, what you want to do now is you want to take your spoon and you want to dig a little hole in the middle of the meat and that's where you are going to put your seasoning. Let's make a nice little crevice. This is where you are going to put your seasoning. One of the most important spices is cumin. I tend to put a lot of cumin in mine. This is roughly about six or seven tablespoons of cumin. Another important spice is chili powder. I roughly put about five tablespoons of chili powder. Remember this is all for taste. It depends on if you like it really spicy or if you don't like it that spicy, you want it mild. So it is really up to you. As you're going along as it's cooking, just take a tablespoon and taste it and if it needs a little more of this or little more of that just add it in. Add some garlic powder. Then add some oregano, a little bit of black pepper, and a little bit of salt. Now just really watch it with the salt. I wouldn't add that much in the beginning while you're cooking it and as you're tasting it as it's cooking then determine if it is a little too salty or not too salty, just do it then. I would put a little bit it in the beginning, and then add to as you're going along. The last thing I add is hot sauce. Some people don't like the chili really spicy. I like mine really spicy. So it just depends on the person. So if you want to skip this step you can or if you like it really spicy add some hot sauce. So now you want to turn your stove back on and then stir all of the spices in to the meat. Then you're ready to add your vegetables.
