Hi, I'm Matt Senatore on behalf of Expert Village and today we are going to learn how to make Midwest Chili. Spices are the main thing in a cook's arsenal. I mean you have to have spices. I mean spices can make or break your dish. I know a lot of people who just put salt and pepper and just the basics in it, but I really urge you to experiment with all types of spices. There are so many spices out there; I don't even know all the spices that are out there. One thing, don't laugh, one thing that I like to do, I like to eat hard boiled eggs, and that's how I test my spices. So what I do is I have hard boiled egg and I put some salt on it and I eat it and taste how the salt tastes on the hard boiled egg, and then I put some pepper, and then I take another bite, and then I'll put garlic, and then I'll put rosemary, and that's how I test and see how spices taste. If something agrees with me then I will try it in one of my dishes. So I think you should definitely experiment with every type of spice. There's going be some you don't like, there's going to be some you love and you'll just add that to your arsenal. So let's add some spices to our chili.
