Hi! I'm Lori Schneider from Figs Catering out of Austin, Texas. Today on behalf of Expert Village, we're going to show you how to make mini turkey and parmesan burgers on pita bread. Our next step is going to make slices down the length of our avocado being careful not to cut through the skin. We're just going to make small little dices. You do want to do this step very last as everything else is being finalized because the avocado will oxidize. You just want to be very careful. I'm going to do this with the other one. Oxidation just means that when the air hits it or the oxygen hits it, it's going to start browning. It starts its browning process. We've got that ready to go. We're going to wait until our plating process to scoop it out. To keep that air out of there, I'm going to put those two halves back together and set them aside.
