Roll Phyllo Dough onto Baking Sheet for Sponge Cake Recipe

Hi, I'm Rachel for Expert Village. I took the dough after 2 hours of resting in the refrigerator. If you don't want to use all the dough, you can use 2/3s of it and the last third you can leave to make something else. I'm going to use only 2/3s of the dough tonight and leave the rest to do something else. As you can see as I cut it. You can see all the layers that we made; it is cool. I'm going to put it in a plastic bag and you can freeze it for a long time in the refrigerator and just take it out before you want to use it and let it defrost. So we have here I'm going to cut into half and roll half of it on a baking sheet. What I need to know is the size that I want to use; basically the size of the baking pan that we are using. We are going to put the dough, you are going to see on the outside like that. Bake it on the outside because it is easier to turn it over and just get the dough off and put the sponge cake in the middle. Plus it make a little dish. So we need the size of one centimeter bigger then the pan cause it shrinks a little bit during baking. Maybe I put another baking sheet on top this way it will not stick. You can either use another baking sheet or use some flour to roll the dough. You should not make it too big or too small cause you want the nut cake to fill inside. Just put it, I think we need a little bit more on this side. I think we are done. I think that is a good size.
