So my poblanos have cooled down a little bit, I removed the skin from them and now I'm ready to go ahead and remove the insides so we can replace it with our picadillo stuffing. What I'm going to do is I'm going to fine, I already got a little cut here so I'm just going to go with that and cut down the length of the poblano pepper. One of the things I like to do for presentation purposes alone I like to leave the top on. Some people like to cut it off but I think it really just looks really nice to leave the top on. What I'm doing here is I'm putting my fingers in there and removing the seeds of the poblano pepper. A lot of them have come off real easy I'm just going to take them out and dump them on my baggie here so I can get them off. In the seeds it's a lot of where the heat does hide they're actually in the ribs of the poblano pepper. But the seeds can be tough and bitter so that is why I like to remove them, if you miss one or two in there that's okay. Now that I removed the seeds I got is this perfect little vessel to hold my picadillo so I'm going to go and set my poblano pepper on the sheet pan. We're going to do the same for the other two peppers, I found my hole that I already made so I'm going to go down that hole and cut all the way down. I'm going to remove the seeds, they're in a big bunch right there just get your fingers in there and remove them. This is why you wear gloves cause the seeds are hot and spicy. Now I'm just going to scoop out the ones that have falling out already. One thing to remember when you're removing the seeds is make sure periodically check your picadillo cause remember it's back they are cooking. Also remember your potatoes are back in the oven cooking as well so make sure you kind of keep your eye on all of those different things. I like to make these and add these different dishes as well, you can do a bunch of them ahead of time. Use the for different things I know like we make a turkey meatloaf, I love to put the poblano peppers in the turkey meatloaf. It gives it a really great unique flavor, this is our last poblano pepper (these guys are wanting to stay with them) alright, again not the cleanest thing but, that's okay. Almost there, perfect, alright that is our last poblano pepper, let me get these guys out.
