Our first step for our step for our pulled chicken enchiladas is to make the oil that we're going to use to kind of fry our tortillas before we roll them up. You want to make sure that you fry your tortillas before you roll them up, so that way they're nice and soft and they don’t break on you. In order to do this, you're going to take a sauce pan over here. I've got it set to medium high heat. Here I have about a cup of vegetable oil. I'm going to place this into my pan. As you see, you don't need very much. You just need enough so where you can dunk the tortilla in the oil on both sides. My next thing is I'm going to go ahead and add some dried chili powder to my oil so I can go ahead and flavor the oil, and it's going to flavor the tortilla as well. I'm going to add about a tablespoon of dried chili powder. If you don't care for the chili powder flavor, don't worry about. Just don't add it into the oil. My next step with this oil is to go ahead and let it heat up to about 300 degrees. That'll be perfect temperature to dunk my tortillas in the oil.
