So the first thing we're going to do is to get our salsa started and I like to do a fire roasted salsa. So we need to get everything in the oven and make sure that your oven is set to 450 degrees. So first we're going to take tomatoes and we're going to go ahead and cut them, since these are pretty large tomatoes. We are actually going to cut them into, I guess eights would be the right number here. So cut them in half and then cut them in half again, I'm going to throw these onto my sheet pan. What we're going to do is the purpose of cooking these in the oven is going to be bring out the natural sugars in the tomatoes, it's going to make it a little sweet. The sweet is going to pair really well with the spiciness of the jalapeƱos so it's going to be a really nice combination. These tomatoes as you can see are ripe however, if you have over ripe tomatoes this is really a good opportunity to use them. Over riped tomatoes work really well in salsas in sauces because the flavors are really intense. So since our tomatoes are so bit we're just going to do three of them, we're going to spread them out onto the sheet pan and this is what they will look like.
