Hi. My name is Lori Schneider with Figs Catering in Austin, Texas. Today we're going to make potato and chorizo empanadas with a red pepper and cilantro sauce. To do this you'll need the following ingredients. You'll need puff pastry sheets. Mayonnaise, Dijon mustard, roasted red peppers canned, Mexican chorizo, cilantro, red potatoes, one egg, yellow onion, garlic, vegetable oil, pan spray and flour. The equipment that you're going to need include a bowl with water, a vegetable peeler, a pastry brush, a fork, a knife, a rolling pin, a cutting board, circle cutters or a biscuit cutter, a plate with a paper towel on it, a sheet pan, a saute pan, a spoon and a blender.
