Mont Au Beurre for Tomato Soup Recipe

My name is Brandon Sarkis on behalf of Expert Village and I am making tomato soup. One other optional step of the soup involves the butter, this is not exactly the best way to do this from a health standpoint, but it sure does taste good. We are just going to put the butter right into the soup it is called melting the butter or in French mont au beuree, and what this does, this gives you a nice, you don’t want to melt the butter, you don’t want to cook the butter but what you want, you want it melted but you don’t want it to separate, you just want to kind of add it in, incorporate it into the soup, don’t do this over heat because then you will just get oil and this gives it a nice rich texture and a nice sheen to the soup also. This isn’t something you can do beforehand, this is something that you do right before presentation, if you try to do if beforehand it will all separate out and you will make a big nasty mess. So, just some nice gentle strokes here, you can see it is melting nicely and you want to make sure your butter, your soup isn’t super, super hot while you do this. You can also do this in the bowl too, if you would like, all right so we are pretty much done with that.
