My name is Brandon Sarkis on behalf of Expert Village and I am making tomato soup. Next I am going to show you a really easy way to dice up an onion. Not everyone knows this and I don't know why, but this is really simple. An onion has two ends. This is the side that was, you know the rooting side and this is the side that it grows out from. On this side, you can tell because it is usually a lot longer and it is going to have the little stems hanging out. What we are going to do is take our knife holding it the same way that we have always been holding it. We are going to cut just this one side off. Just like that. Now we are going to flip it over and cut it in half this way and we are going to peel the skin off and also you know, be careful here and make sure you have nice ventilation because it will start burning your eyes and that's not fun. We are going to put this over here with all our other vegetable chopping. You see the interesting thing about this is that you've kept the onion together by leaving this back side on and this front side is ready to go. So as you start cutting it, it is going to be held together by the fact that it is still being held together over here. That was my timer. So now we are going to take the onion and we are going to hold same way and we are going to make a series of vertical cuts. I'm doing them probably a quarter inch a part, just like that. Some chef's say you can cut this way to make a smaller dice. We are not doing an exact dice. We are doing a fairly rough cut here for a soup so I am going to cut across the top like this and you see, it magically comes out nice and diced already. When you get to the end and if you feel uncomfortable trying to slice it like this since all we are doing is dice, you can just do it like this. Use up a whole lot of your onion this way, keep your stem and goes in your stock pile. No big deal. Move this out of the way and since we only need a half an onion, I'm not going to bother cutting this half up so I am going to wrap this half up and use it for next time.
