Ingredients for Leek Soup Recipe
Hi, I'm Amanda with Expert Village. Today we'll be preparing leek soup with Brie cheese. It is a delicious soup and it is light so it can be served as a first course or just as a light supper. For the soup you will need 6-9 large leeks, 2 tablespoons of butter, 8 oz of thinly sliced mushrooms. Today we are using Crimini mushrooms, 1 clove of garlic minced or pressed, 1/2 teaspoon of dry tarragon, 1/4 teaspoon of ground white pepper, 2 1/2 tablespoons of unbleached all purpose flour, 1 quart of homemade or can vegetable broth, 1/3 cup of whipping cream, and 6 oz of Brie cheese.
