Hi my name is Lori with Figs Catering in Austin, Texas on behalf of Expert Village today we are going to show you how to make a entire Thanksgiving meal. The first step to making your stuffing is to cut all of your bread and because we are making a sour dough bread stuffing we got sour dough bread here to cut. Now you can use any kind of bread really for your stuffing and you can actually do this ahead of time. Because we are going to dry it out you can do this 2-3 days ahead of time and that way it is ready to go. So now that we have some slices I'm just going to line them up and I'm going to make long cuts down the length of the slices. I'm cutting these into about half inch to half inch squares and that so it is easy to eat. I'm going to cut it the other way so I got little cubes. These are actually going to dry in the oven for about 30 minutes or so. This is a great way to use up any stale bread that you may have again you can use it, you can freeze it. It is really really versatile. This is what your cubes would look like. For our sausage apricot mushroom stuffing we are going to go ahead and take our sour dough bread that we cut into cubes and place into a oven at 350 degrees for about 20 minutes. The purpose of doing this is to suck out any moisture that we got in the bread and that way when we go to cook the stuffing that moisture would be replaced with juices from the sausage and the chicken stock. Our bread is done cause it has a nice golden color to it also when I break it there is not moisture left in it what so ever it is pretty darn hard and that is exactly the way we want our bread cause we are going to suck up even more moisture and flavor in our stuffing.
