How to Cook Garlic for Mashed Potatoes

Hi my name is Lori with Figs Catering in Austin, Texas on behalf of Expert Village today we are going to show you how to make a entire Thanksgiving meal. Our roasted garlic is now ready it has been in the oven for about 30-45 minutes. We put a little bit of olive oil on it and we know it is ready cause when you squeeze it, it is very very soft at the touch. Now it is still really hot but once it cools a little bit I would be able to squeeze it a little podge would pop right out. The flavor of garlic changes tremendously whenever it has been roasted cause it turns into a nice sweet flavor and it is much less bitter then regular fresh garlic. Now we are going to use this roasted garlic in our roasted garlic mashed potatoes and it is going to give it a nice nutty sweet flavor. Something that is very unique and because it is so soft it is going to mash right in to the potatoes and offer a really nice consistent flavor throughout the dish.
