Adding Serrano Pepper to Crayfish Boudin Recipe

Hi, my name is Karl James, owner of Creolesoul Catering located in Round Rock, TX and on behalf of Expert Village I'm here to show you a crawfish boudin. We have our crawfish and our holy trinity in here simmered and welting. Now we're going to add those bits of heat to this and that's going to be our Serrano pepper which we're going to dump in there and mix that around. Those juices that are coming from the crawfish it will spread that heat, that pepper flavor throughout our sausage. Once again if you want more heat, add more pepper, add different types of pepper if you like, so we'll continue to saute those peppers into the mixture of crawfish and holy trinity. Let it continue to simmer and we'll do this for about another 1-2 minutes and we'll see you back at the next step.
