Hi, my name is Karl James, owner of Creolesoul Catering located in Round Rock, TX and on behalf of Expert Village I'm here to show you a crawfish boudin. Green onions, our scallions we're going to use both the white and the green portion of the green onions. The green onion where it takes place and falls into this recipe is once everything is sauteed and we have our final mixture there then we're going to add those green onions in. Like I was saying the holy trinity is going to be actually sauteed in with the crawfish but the green onions will be an item that comes in after that's done. Put it in the mixer just before we start stuffing and we're using like I said both of the white part and the green part of the green onion or scallions as they sometimes are known.
