Hi, my name is Karl James, owner of Creolesoul Catering located in Round Rock, TX and on behalf of Expert Village I'm here to show you a crawfish boudin. Now for the second part of our holy trinity we're going to take our onion and we're going to make some slices through it like so. Then turn it and put some vertical cuts in so the pieces will come loose. Then just go down the onion and it will cube those pieces which again is the second part of our holy trinity, add that in and just chop it. This too, will go through the grinder even though at that point we're not going to be really grinding as much as we're going to be stuffing.
