Cooking Rice for Crayfish Boudin Recipe

Hi, my name is Karl James, owner of Creolesoul Catering located in Round Rock, TX and on behalf of Expert Village I'm here to show you a crawfish boudin. Now we're going to prep our rice get that cooked, we want to do that early. I got some boiling water here and I'm going to add the rice to it and we're just using instant rice and stir that into the boiling water. We want to get this done early so that rice will have time to cool off so with the instant rice it's just equal amounts of water and rice. Put the top on and then you can sit this to the side for about 5 minutes and you should have a nice pot of rice there. If you wanted to use regular long grain rice we'll want your rice in the pot and normally what I do is wash the rice to get all the impurities of off. Or you can leave it in and it's kind of starchy then it's normally one to two, to cups to water to one cup rice. Bring it to a boil, turn the fire down to a simmer, let the rice simmer, uncovered don't disturb it, for about 20 minutes. Then you should have perfect rice anyways, we'll set our rice to the side let that get cooking, give it time to cool and we'll move on to the next step.
