Add Meatballs to Stock for Meatball (Albondigas) Soup

Hi, this is Dave for Expert Village and today we are making Albondigas Soup. Okay now that we have our chicken stock boiling away, we are ready to add our meatballs. Now make sure when you add these, they are padded really solidly together because you don't want them to fall apart because this is meatball soup. If they did, you would have sort of ground beef, ground turkey soup which would still be just as delicious. But this is the traditional way. So you just drop them in one by one to the broth. I kind of like to re-roll them a little bit and you do these with tongs if you don't want to be too close to the broth. You just kind of drop them in there. They won't create too much of a splash. This gets them cooking sooner than all the other vegetables and things because you want to be able to cook the rice that is inside the meatballs. So we are going to re-roll them a little bit and then drop them in.
