Hi! This is Dave for Expert Village and today we are making Albondigas Soup. Okay now we want to show you how to chop up some celery for this soup. Now for this batch of soup, it is not a huge bunch of soup, we are going to go ahead and use a couple of ribs of celery. You can use more if you like. I like to chop up this end piece there and this gets really tough down at the end. We want to kind of chop that off too and you can use this for other things like stock so don't worry about wasting food but it is really a good idea to take this portion off. And then what I like to do to get a size that I like, these are kind of smaller ribs but I still like to split them down. If you have some really big ribs of celery and you want to keep them uniformed in size, you can go ahead and split them down length wise more than once and then you will see what we are going to do here. So once I have these together, you can actually put them together. It is easier to chop and I like about this size for the soup. It will go well with the size of the onion pieces that we just did.
