Tips on Choosing Quality Produce for Canning

Ok, a general comment on quality of produce and canning. Basically, what you put is what you get. If you put first class produce in your bowls, you have a better chance to get a first rate product. On the other hand, canning can be a way to deal with some produce that may be damaged, because, well, when you’re turning strawberries into jelly, it doesn’t matter that half of them were squished or smooshed or something. So it’s a way to save things that you would have to throw away otherwise. But try to select good stuff if you want to get good stuff out of your preserve jars.
