How to Cut Up Tomatoes & Onion for Traditional Guacamole

Hello I'm Andras Glockl from Hungary, Budapest we're running Iguana Restaurant we're cooking Mexican, traditional Mexican food. We're open for 10 years now and we are here on behalf of Expert Village. And we have my chef Glockl we're going to make guacamole today. Glockl is cutting the fresh tomatoes to small pieces, you don't have to use much because the main thing is the avocado now. After he's starting to cut the onion again small pieces you have to practice a lot to do it like this again not too much onion. Because the most important is the flavor of the avocado and he's finally going to cut the fresh cilantro. You can use a dry aroma but fresh is a different taste. Cause the guacamole is all about fresh ingredients.
