Apply Egg Wash to Bagels

Hi I'm Rachel for Expert Village. I boil the bagels the same way that I did with the other ones just these one's where for shorter time it was just for 45 seconds. Cause this dough is puffier and it doesn't need as long. Now after I took it out I'm waited for about 3 minutes for the bagels to cool of a little bit before I spread a egg on top of it. You don't want to do it right aways cause the egg might cook on top before you want it to be cook. So we are just going to spread egg on top of each one of them. If you want to sprinkle sugar you can do that to but I prefer to leave them like that just with the egg and I heated up the over for 350. It is a lower temperature then the other ones but they are going to bake for a longer time. These bagels it takes them 35 minutes to bake while we are going to turn them in the middle after 10-15 minutes I'm going to turn them over so they'll will be equally baked from both sides.
