Rolling Out Pumpkin Pie Crust Dough

Hi, my name is Stephanie Barnett and on behalf of Expert Village I'm here to show you how to make a pumpkin pie. So now we're going to take our chilled dough and two pieces of wax paper. If you don't have wax paper, you can use clean film, but I find wax paper is much easier to deal with. You will take a little bit of flour and lightly dust the wax paper. You'll take out the dough. It might stick a little bit to the wax paper but eventually it should release. You'll put a little bit more flour on top of the dough, put the wax paper on top of the dough and you will roll out the dough. It's going to be hard when you first roll out the dough, but just keep at it. It's important to always open up the wax paper and flip the dough around and roll. You want to make an even crust. So if you can't tell by how you are rolling the crust, you can take your hand and not for a long time because your hand is warm and you want to keep the crust cold, you lightly feel it. I have a lump in the middle, so I need to even that out. Now, if you're wondering well how big do I make the crust? You can take your pie pan and put it right on top of the crust and adjust. I need to make it wider. It's long enough but not wide enough. Also, you want to release the dough from each side. I'm going to release it, I'm going to flip it and then I'm going to release it again. This makes picking up the dough for the pie pan much easier.
