Add Flour to Salt Rising Bread Sponge
Hello my name is Jenny Bardwell and I'm here on behalf of Expert Village with my colleague Susan Brown and we are going to teach you today how to make salt rising bread. So after 3-4 hours just depending on how your starter and you sponge is after it has doubled you can gently put it into the bowl and you can add additional water at this point. Usually I have heard you can add about 13 more cups of water if you wanted to make 13 more loaves of bread. Some kind of ratio like that. You add flour, how much flour Susan I never measure anything. When I first meet Jenny she was making yeast bread and she never measure a thing. How does she make and never measure but she does a wonderful job and I always measure and for 5 loaves of breads I use about 11 to 13 cups of flour. Sometimes I add salt, I like salt in my bread. Sometimes I will add some whole grain, oats, flat seeds and if you want to add those ingredients this is the time to do it. So like any traditional bread making you add flour until it starts separating from the bowl and holding it's own shape.
