Puree Broccoli for Soup

Hi this is Richard Buccola in New York City and on behalf of Expert Village today we are going to show you how to make some cream of broccoli soup. Okay one of the utensils that I didn't say is a whisk. I like to whisk, you can use a fork though. A whisk is this, a fork is the same thing. I do put my cream for the cream portion of this soup on a low flame at this point. I come back to my broccoli and see everything is looking great now. I like to actually lower this flame a little bit more now. I'm going to lower it just a little bit and this point I'm going to puree. I puree right in the pan, you might have to take it out and use a blender or a Cuisinart or whatever. You can use a masher for using on mashing potatoes it doesn't matter. I have a really cool one you see you can't cut your hand cause the blade is in there. What you do is come in here with this thing and start pureeing everything. If it does not puree easy that means it has to cook a little bit more but you can see this is pureeing so easy and you just go down on it. The reason I don't put the cream of pie in cause when I puree I'm trying to save time. So I'm going to puree this and get it down to really tiny pieces. You can use a blender or whatever works for you. Then whenever this is puree I'm going to turn the heat up on this and get it to where it is hot and boiling and dump it right into this, add some pepper for taste. When I come back I will tell you how it is done.
