How to Make Stuffed Dates

You know different almonds have different moisture and different humidity in different areas of the country. So if your batter is not sticking together, you might want to add about a tablespoon of water to get a nice, doughy consistency, like this. See, that's the consistency you want to hold together. Beautiful. Well why don't I just start stuffing these. You just want to take a one inch ball, like this, and stuff it inside your date. Again...a little ball of marzipan...stuff it inside the date. And really this is like Mediterranean candy. It couldn't be any more natural and wholesome. So here we have our beautiful dates stuffed with marzipan. You can chill these if you want to. It might be...you might want to chill these a couple of hours or so, after...just because things in the food processor get warm. Okay, let's see how these taste. Dates with marzipan. Mmmm, it's sweet, but it tastes real, it tastes like the Mediterranean. The almonds, dates...what a great combination. What a great ending to any kind of meal, especially our...what did we...starting a meal with some hummus, having a little penne pasta with our fried garlic pesto sauce, and ending with a nice, light, little date stuffed with marzipan.
