Blending Ingredients for a Pesto Sauce Recipe

So now comes the fun part of putting together our pesto sauce. We have our fried garlic cloves. You look at the beautiful dark rich color that it comes out to. Isn't that gorgeous? Really sweet flavors. We have our roasted peppers here that we did. If you don't want to bother with that, you can also use store bought. I won't judge you, you can certainly use them if you don't want to go through the trouble. Pesto, basil, cayenne, salt and olive oil. So simply we are going to start dumping everything in there. Start with the garlic, the red peppers and our cup of leaves, basil and let's start chopping away. Now we are going to slowly add in our half cup of olive oil. A little nice stream of olive oil consistence. What that does it helps create what they call a emulsification which is when oils and water subjects blend together as a solid. You know how oil and water doesn't mix. But it does and when it does, it's called a emulsification. Isn't that pretty? There we go. So all we need to do is add a little bit of balsamic vinegar. That little acid is going to give it a nice tang and then a little pinch of cayenne pepper. It is going to give it a little bite and a half teaspoon of salt and that's your Pesto.
