How to Use Guacamole to Stack Food

On behalf of Expert Village this is Ian McSwain of Passion Foods in Miami, Florida and today we're showing you a quick and easy Mexican recipe. Today I'm going to be making guacamole. I've seen it placed on as a base, these days I say for the last 10, 15 years I should say I'm sure you've seen in restaurants chefs that stack food and they have these enormous mounds of different layers of food. Well this is always a very easy food to stack because it's like a paste as you can see it holds up together and you take a ring of some kind whether it's a PBC ring a piece of pipe that you cut and use to form a mold or they have these stainless steel ones that are a bit higher. You can layer different foods with like a crab salad, you'll have a layer of guacamole and then a layer of maybe a tomato and fresh crab and topped and then remove the mold and it stacks, it looks great for presentation.
