On behalf of Expert Village this is Ian McSwain of Passion Foods in Miami, Florida and today we're showing you a quick and easy Mexican recipe. Today I'm going to be making guacamole as I was saying this was a good avocado and if you take a look at it from the outside it's sometimes very hard to tell whether an avocados going to look nice in on the inside. If you look at this the one that I cut was pretty similar it doesn't give you the appearance that's going to be so nice on the inside and sometimes you can be fooled you can have a beautiful green avocado and you feels fairly rip. You cut into it and its damaged its black its nasty there's some indicators just that will let you know there not you have a fairly good avocado. The texture should be firm but a bit pliable the firm sense that it's not squashy you know for instance, right here but I don't know if you can see this but you see how that's squashy there. That will tell you that area here it's going to be dark on the inside and you probably have to discard it. But the rest of it bends a little bit but still holds up sometimes you'll have an avocado shake it and you'll feel the pit loose inside that's also somewhat of an indicator of the ripeness. Because if it's not ripe its very tight around the pit and that will tell that its definitely not ripe, this that's not much movement in there but a little bit but the color doesn't really determine the exterior color does not really determine whether its not going to look nice on the inside.
