Hi on behalf of Expert Village my name is Andrea Spano and I'm going to show you a couple of soups today from my new book Not Just Desserts. Our second soup is a little bit more involved then the tortellini soup with the chicken on the scallions because today we are going to have to peel about 3 pounds of potatoes, we are going to have to wait for that to boil and then we are going to cool it down a little bit then we are going to puree it in the blender to that it gets homogenized and so it is going to be a puree soup that we are going to add cream to. Okay and the ingredients today we are going to have at least 3 pounds of potatoes but I'm going to show you how I do the just practice on 2 of them we are going to have a quarter of onion. Half a onion not to much and we are quartering it so it is not in small pieces cause we are going to puree it anyway so why waste the time in dicing it. We are going to put in margarine or butter for a little bit of flavor, we have about 2 tablespoons of jalapeño peppers and you can also use chili peppers but I use jalapeño peppers in this soup. We are going to use heavy cream and salt and pepper to taste. For garnish we are going to use chili powder, a little bit of oregano if you have parsley that is fine. Anything green you want to some cloves on cause remember that the soup is going to be your potato soup with cream it, it is going to be beige it is not going to be color on it so we are going to maybe add red, yellow and green.
