Hi on behalf of Expert Village my name is Andrea Spano and I'm going to show you a couple of soups today from my new book Not Just Desserts. When the broth was ready I took it off the flame, I cooled it a little bit, I took the chicken out and put it in the refrigerator. When it cooled off enough what I did was take the chicken off the bone and shredded and this is going to be our chicken for the soup. Also making the broth with chicken with a bone adds all the flavor so now you have all 4-5 quarts of chicken broth which I could freeze for later use but also use it today fro 2 soups. I turn the back burner onto high and I'm going to put my bowl with the pot the broth on it now we are going to wait until this comes to a broiling boil, after that we will put the chicken in, the scallions, and then we would add our tortellini.
