Hi on behalf of Expert Village my name is Andrea Spano and I'm going to show you how to make several different flavored cheesecakes but one basic cheesecake recipe from my new book Not Just Desserts. It's a this point where you finish the cheesecake mixture that you want to preheat oven. We're going to put it on 300 we're not going to bake the cheesecake at a very high temperature because the inherent nature in cream cheese is to exude moisture and the high that you bake it the more moisture it's going to loose. And what happens that everybody knows that the cheesecakes will crack so if you bake the cheesecake on 275 or 300, I set it for 300. What happens that it'll when you bake a lower temperature the proteins in the cheesecake and the cream cheese are going to develop and it's going to prevent cracking of the cheesecake. So that's one way to make sure that you don't bake the cheesecake at a high temperature so we're doing it at a 300 today.
