Chilling the Shrimp for Creole Shrimp Crab Salad

Hi my name is Karl James owner of Creolesoul Catering located in Round Rock, Texas and on behalf of Expert Village I'm here to show you a creole shrimp crab salad. We got our shrimp in our salted water we brought it to a boil we put season shrimps into that covered it up and we let it sit here for about 5 minutes or so 4 to 5 minutes, we take that top off and if you look at our shrimp you'll see there hot. It's got that pinkish color and that's what we want them right there we don't want to over cook them so we want to take them out of this pot, and we're putting them into an ice bath cause we want to stop that cooking process that's going on. Cause we want them to still be somewhat juicy and tender plus gives it a real fresh flavor so we'll remove your shrimp, perfect, and nicely seasoned too. So let's get them all out of here into that ice bath cause that cold water that ice will just stop that process of cooking right there, there's nothing like over cooked shrimp and there shouldn't be anything like over cooked shrimp. It's the same thing like if your say making a seafood gumbo I mean one of the last items that you put into that will be your shrimp cause it takes no time to cook. And as you see we did these just by putting them in a pot of hot water and so we got our shrimp in an ice bath here to stop that cooking process, let them chill out a little bit and move on to our next step.
