Tips for Searing a Fish Fillet

Now we're going to show you how to sear and today we're actually going to show you how to use a preseason salmon fillet and I got a medium high flame and all I'm going to do is put some clarified butter in the pan. And we're going to lay down the presentation side first and immediately upon hitting the pan it's got a nice sizzle which is what we want. We want to get a really nice searer coming off of this, now we've seared this one side of the salmon the presentation side so I'm going to gently flip it over with my fish spatula. And now you can see the actual colorization of the nice stripping that we got from our grilled pan and that is the actually sear that we want to get. It's a nice golden brown finish it's not actually cooking the salmon it's just giving it a nice color and then we'll finish cooking the fillet of fish through inside the oven, which is preset at 375 degrees.
