Hi this is Dave for Expert Village today we're going to discuss champagnes and sparkling wines now that we got our bottle expertly chilled for a special occasion your going to take it out of the ice and always use a napkin this will help you grasp the bottle. Kind of clean it off a little there's usually along here along the capsule a little tab that you can pull across here that's going to free the capsule from the top. I like to hold it in my hand like this and then go ahead and peel away this top and that's going to expose the cork for you, then on the capsule there's a wire basket that goes around this. This is going to hold in all that pressure so there's a lot to do it I seen a lot of people wanting to just let the cork fly, kind of dangerous for a lot of people around for there eyes if your getting hit. What I like to do is once I start opening up that little basket I like to go ahead and put my towel over the top of it just because there's a lot of pressure in there. I just kind of hold it against my body a little bit I'm not quit as festive as that but it's going to help your people not get hurt, then what I like to do is trim this and the pressure is going to pull that cork and your going to hear a little bit of SSSSSSs and that let's out all that pressure out, so now your not only not hurting somebody, haven't lost a lot of your champagne in the process, so this is a way to open a champagne.
