Methode Champenoise Champagne Fermentation

Hi this is Dave for Expert Village today we're going to discuss champagnes and sparkling wines okay there's a couple of methods to be making champagne and sparkling wines the classic French technique and now all over the world with great wine grapes is Metho de Champ enoise the champagne method. And basically what it is a blend of wines that is that has a secondary fermentation as we talked about Dom Perignon, pretty sophisticated what they do they start with fine blended wines in a bottle, and then they add yeast to it and then recap it and it will start a secondary fermentation. Which is going to cause the carbon dioxide to create the bubbles in the champagne, the better of course the better the wine the better the champagne. It's a long method and it's pain staking but it's worth it for good champagnes. This is the Freixenet Brut from Spain and it says fermented on the bottle, that's basically the same language as Metho de Champ enoise.
