How to Dice Carrots for Lentil Soup

Hi this is Karen for Expert Village we're going to peel and dice our carrots and we're going to clean and dice our celery I like to use a bag or a piece of baking paper something to peel the carrots onto. So that if easy clean up I can put all my throw that into the garbage after, just peel those carrots and we'll trim off the tips and the end. Just cut the carrots in half lay it on the flat side it's a lot easier to cut and depending upon the thickness of the carrot cut it into little strips somewhere about a 1/4" and 3/8. When you have it all cut into strips like this then you hold your whole bunch of carrots strips together somewhere like a claw fashion like this with your knuckles bent. This makes it so that the knife will not cut your fingers if you holding your vegetables like this it's very likely you can trim the edge of your fingers. So like this the knife blade will hit that knuckle and there's nothing in the edge of the blade never gets closed to your fingers. So when you slice across you want to keep the knife moving in sort of a rocking motion you just chop straight down takes more work, a smooth motion will actually slice the vegetable and it's easier so this gives you a nice even dice of carrots. Just go down to the end moving your clawed hand all the way down to the end we'll put that in with the onions and our garlic.
