Hi this is Karen for Expert Village for this soup we're going to dice peel and dice our carrots dice our celery and peel and dice our onions let's start with the onions. First take off this top bit here and just trim the root section but leave the root section in tact, we're just going to take off the dirty end and then peel off any the brown outer layer of onion skin. So you just take the pairing knife and kind of pull that off like so now the reason why you want to keep that root section in tact is cause it will hold the onion together while your cutting it, and we're going to take our pairing knife and just slice in starting here, not all the way to the end, but starting maybe a half inch to a quarter inch from the end. Just slicing like that all the way down and now for a small dice you also want to slice horizontally and that is and also do not go any further than there. Cause you want the root section to hold the onion together while your slicing this will be very helpful and not getting so much onion vapor that makes you cry, it also makes it very easy to dice an onion. You get nice even pieces, now your cutting across our onion as you see we're getting a really nice dice nice even dice, continue that with the rest of your onions and you can either chop up this root section or discard it.
