Whipping Cream for Chocolate Mousse

Hi, this is Karen for Expert Village. Next we're going to whip our heavy cream or our whipping cream in a electric mixer fitted with a whisk attachment. You want to make sure that your heavy cream or whipping cream is very, very cold, this is very important for whipping cream, it should be very cold. You can even chill your bowl if you want, to ensure success. Okay, now let's transfer that to a bowl, we'll set that to a side and we'll use our bowl and our whip to whip up our whites. So we'll transfer that in here, being careful not to well as you scrape out not to flatten the whip cream, you don't want to knock any of the air out of it. Just remove it all from the bowl. Now you want to be very careful to wash the bowl and the beater and the spatula very carefully with soap and hot water to make it very clean. If any of the fat from the whip cream is left in the bowl or on the beater, you can ruin your egg whites, they won't whip up. So I'm going to clean that up now.
