Hi! This is Dave for Expert Village. Today we're going to make some steaks with brandied mushroom sauce. Now we want to prepare the mushrooms for this dish. As we said before, we have regular domestic button mushrooms as well as a reconstituted shiitake mushrooms, which I'll show you how to chop. A lot of people still want to use this stem on here. That's fine. I like to take them out. They're a little woody, a little tough, but I just like to take the stem out just like that. Really easy. You see how they come out just like that. I'm just using the caps right here. See how easy that is to do. These have been washed thoroughly. Mushrooms of course are grown in soil, so you do need to clean them up quite a bit. A lot of the things you get in a grocery store are already cleaned really well so just go ahead and take all of that out. Again, you can use the stems if you'd like. That works just as fine. Just my preference. We want to slice these instead of just chopping. Just run your knife through just like that. You're going to have a beautiful, beautiful mushroom just like that. You want to go through all of those. This will give you an idea of how to do these. Now, what we want to do is take the shiitakes or if you want porcinis out of your pan. It's going to leave that great broth that's made with chicken broth. You just want to put those out on your board just like this. Now, with these, I think you can go ahead and leave the stem on. Sometimes it's a little bit tough so I like to take that off too. Again, it's all preference. All you need to do is just go ahead and take that stem right off of there. These are going to be a little chewy in the beginning just because they're reconstituted, but as they cook they're going to have a beautiful texture to them. Just go ahead and take that stem off. Then just run your knife through these just like that.
