Hi! My name is Greg Goldberg. We are here at Minetti's Italian Specialties here in Wayne, PA. I am here on behalf of Expert Village and today we are cooking chicken parmigiana. We are going to come back over here in order to bread our chicken. We are going to start with our first cutlet. We are going to place it right in there. Press down real hard. Since we are not using an egg mixture, you need to make sure as many of the bread crumbs stick as possible. So coat it really well. Don't be afraid to press down. Give it a little elbow grease. Move it back and forth and that is going to be beautiful right there. We don't want too thick of a mixture coating on the outside. We want it to be a real nice thin crisp coating and we are just going to continue with the 3rd and 4th one, pressing them down, flipping, pressing and the last one right there. There we have our 4 pieces. I am going to put them right on the tray here in my oil which I hear bubbling and sizzling so it's got to be ready.
