Cutting Broccoli for Beef & Broccoli

Hello my name is Hui Yau on behalf of Expert Village today we are going to cook a very common Chinese dish beef and broccoli. First of all we would cut the broccoli into two piles and we would save the steams later just cut a little bit below the crown as you can. Then we would turn the crown upside down and the we would trim the pieces equally from the bottom. If we do it the other way you can see some smaller pieces would be produce which are not suitable for stir frying. Now we are going to cut off the wooden stem in the bottom which is to tough for eating. You can see inside should be juicy and then we turn it in a upright position start trimming out the outer skin which is also to tough. When we have the middle part we can just cut down into wedges about 1/2 a inch thick and we should be done.
