How to Handle Filo Dough When Making Greek Dishes

Hello my name is J and I'm talking on behalf of Expert Village on this clip we are going to talk about he handling of the filo dough. When you get your filo it is going to come in a package kind of like this most packages are going to come with handling instructions and thawing instruction cause it does come frozen. For thawing you usually want to stick in the refrigerator for 7-8 hours to thaw and once it thaws you want to bring it outside of the refrigerator and leave it out side for about another 2 hours. As far as bring out your sheets of paper you just need to bring out your sheets of filo paper and let them sit out however many you needed for the ingredients. Say if the ingredient calls for 8, you bring out 8 and you let them sit, when you are letting them sit you want to cover with wax paper or cover with foil. As far of cooking part of this you basically want to put a little bit of butter on them and cook it like that. They are very very fragile as you can see it is kind of taring already and you need to be very careful with this. These boxes usually come with a bunch of filo in them I will say there is about 30 sheets of filo in here. When you are preparing to make your spanakopita you want to make all of your ingredients that are going to go in the inside first and then once you are done with that then you can go ahead with the wrapping section. But this stuff is really cool if you want to reroll any of your unused filo sheet you can reroll them and put them back in here and you can freeze this again. You can stick it in your freezer and it would stay there for a months at time. That is it on the handling section of the filo again if you see any cracks like this you can just cut them off and cut to however whatever size you want. If you want to make triangles or whatever it is that you want to do with them you can cut them however you want. This is my way of doing it though. That is it on handling the filo.
