Prepping Pig for Pig Roast in China Box

Hi this is Dave for Expert Village and today we are roasting a pig. Okay now that we got the pig all marinaded and seasoned, it has been overnight 70 degrees now the internal temperature. We want to put into the racks of the caja china you would see that there is sort of a triangular shape leg on the middle so you want to put that down here and you would see why in a while. Then you put your pig, just grab it you may need somebody to help you with this, this is one is a fairly light one at only 30 pounds. I think one person could handle that. So you can put it right here on top and then you get your other side and what you want to do is have the triangular area up on this one cause when you flip the pig you'll have another platform for it. So what you want to do is get your S hooks I'm going to put one on here which what you want to do is put probably 3 on each side to hold it together. Basically it is just like this and then one on the other side here. So just to get it started you can pull it together get a larger pig you may want to use maybe 2 S hooks or something like that to extend it cause these do get a little bit thick so there you go.
