This is Peggy Charlton for Expert Village on how to make great yeast rolls. I'm at just at the end of the process now. I just rolled them out, put them in greased muffin tins and this is 18 rolls. Now if you notice some of these rolls are going to be pretty big, some of them will be smaller. Personally I like to have the different sizes because sometimes you're going to have younger children there, you're going to have elderly people and they just don't eat that much. So they can have their little rolls. Otherwise if you had a big roll, they're all big, they are not going to eat it all and you might waste some. But these are for your hearty eaters and these smaller ones are for just the young ones or the elderly. Now, I get an old, as you can see this is a pretty ancient cup towel and just get all lightweight cotton cup towel and I put this over these rolls and now they will rise for 2 hours. Then I'll be able to put them in the oven. So since it is 4:37 now, it looks like that in 2 hours I'll put them in the oven, they'll take 10 or 15 minutes to cook. By 7'clock tonight I'm going to be able to eat those yeast rolls and boy is that going to be good.
